Rum Butter Cider Ingredients

  • 1 oz. Grand Marnier
  • 1 oz. Butterscotch Liqueur (Bols preferred)
  • 1 1/2 oz. Rum (Zacapa 23 Year Rum preferred)
  • 4 oz. hot apple cider

  1. Add Grand Marnier, Butterscotch Liqueur, and rum to Irish Coffee mug or a traditional coffed mug
  2. stir in apple cider

Cider is made from apple juice which has undergone two different kinds of fermentation. The first fermentation is carried out by yeasts which have either been added deliberately or which are naturally present on the apple skins. This fermentation converts sugars to ethanol and the higher alcohols (fusel alcohols). The second fermentation, the malo-lactic fermentation converts L(-)-malic acid to L(+)-lactic acid and carbon dioxide. This fermentation is carried out by lactic acid bacteria which are present in the apple juice and also in the area in which the fermentation is carried out. The malo-lactic fermentation can occur concurrently with the yeast fermentation but more often it is delayed until the fully fermented cider reaches 15 C, normally in the late spring or early summer of the year following that in which the cider was made.

Once cider is in a fermentation tank, it cannot be moved, because this will stir up sediments. After around two months, the cider is carefully decanted and the container is cleaned to remove sediment. The cider can age in an oak barrel, or be placed back in the fermentation tank, as long as it is meticulously cleaned. At this stage, the hard cider will taste very sharp and raw; the flavor will mellow as it ages.

There are many pear flavored liqueurs here’s a partial list: Kruskovac, Poire Williams Liqueur, Belle de Brillet, Rothman & Winter Orchard Pear, Kammer Williams Pear, Xante Pear. There are a number of pear brandy’s the might work in this drink. Experiment and find what you like.

Glogg / Mulled Wine Recipe

Glogg is drink often consumed around the holidays and Christmas time. This mulled wine recipe or Glögg is tasty and not very difficult to make. It’ll likely require a trip to the store to get the right ingredient but it will be worth it. Glögg (Glogg) is a Swedish drink for a cold winter evening. It is heated, spiced and sweetened wine, a bit like the German Glühwein. Enjoy.

  • 12 oz. SKYY vodka
  • 1 bottle (750 ml) dry red wine
  • 1.5 tbsp. mulling spices
  • 1 tsp. fresh orange zest
  • 2 tbsp. sugar
  • 2 tbsp. blanched almonds
  • 4 tbsp. raisins

Directions

  1. wrap mulling spices in cheesecloth.
  2. in a large saucepan, combine the wine, SKYY vodka, cheesecloth with mulling spices, orange zest, and sugar.
  3. allow to very lightly simmer over medium heat for at least 30 minutes (do not boil).
  4. discard the mulling spices.
  5. Drop a few raisins and almonds at the bottom of each mug and top with the hot liquid.

Glogg is a traditional drink of the Swedish & Finnish Advent season – Advent being the six weeks leading up to the Birth of Christ on the 25th of December. Glogg is traditionally made with red wine, and each small glass has a few almonds and raisins in it as well as the drink. December in this region is a dark, wintry time, and this hot drink helps keep the spirits cheered.

Glogg’s origins are with mulled wine – wine heated with spices. Mulled wine was known to medieval Europeans and celebrated from at least 400AD.   • 1/2 cup table sugar
  • 2 cups low-pulp or regular orange juice
  • 2/3 cup lemon juice
  • 1 bottle light rum (750 milliliter)
  • 1 oz triple sec liqueur
  • 1 orange, sliced into rounds
  • 1 lemon, sliced into rounds
  • 4 ounce jar of maraschino cherries and juice
  • 8 ounce can of pineapple chunks
  • 1 liter carbonated water
  • ice

Directions

You’ll need a large punch bowl. Be sure the ice is fresh. Old ice can give your punch a freezer taste.

  1. combine table sugar, orange juice, and lemon juice.
  2. stir until sugar is desolved
  3. add and stir in cherries, triple sec, and rum.
  4. add/float in pinapple, orange and lemon slices
  5. refrigerate for 1 to 2 hours to help the flavors to meld
  6. add carbonated water
  7. add ice just before serving
